I bought a few different varieties as well as some Jimmy Dean Simple Scrambles which include the egg, and gave them a try.

They tasted good and were super easy! The only hangups that I had with them were that they were a little expensive for so little food, full of wasteful packaging and not using the freshest ingredients.

I realized I could easily make my own Microwave Scrambled Egg Cups with leftovers I already had in my refrigerator and some fresh herbs from my window herb garden!

Like anything else in my life, I love a good variety in anything I eat. I could have just made a copycat recipe for the All American kit with bacon, cheese and potatoes, but that wouldn’t suffice. I came up with the following 7 varieties in these easy scrambled egg recipe cups.

These Just Add an Egg varieties provide lots of inspiration for different ways on how to make eggs in the microwave. They serve as pallets but you can certainly dream up your own combination. Build Your Own Microwave Breakfast Bowl

If you plan on only using one egg for these scrambled egg cups, half pint mason jars are the perfect fit. If you are thinking you might add an extra egg to the mix, you will want to opt for a larger pint jar to allow enough room for everything to cook properly.

I prepped some of these easy breakfast cups in half pint jars for my Dad and while he really liked them, he sent me a picture of eggs overflowing in the microwave after adding two eggs. Don’t make the same mistake he did and be sure to use a large enough jar!

Easy Breakfast Meal Prep

You can choose how many scrambled egg cups you want to prep. Whether you just make one to give them a try, or make a batch of 7 for the week, they are easy to assemble and even easier to cook!

If you are buying ingredients specifically to make these egg cups and not just using the leftovers you have on hand in the refrigerator, I recommend making several of the same variety. This way you won’t be wasting fresh ingredients.

Can you cook eggs in the microwave?
