🙋What Is Silken Tofu?

Silken tofu is a type of soft, creamy non-dairy tofu with a high moisture content. Some key things to know about silken tofu:

  • It has a smooth, custard-like texture similar to soft pudding or silky cream. This makes it perfect for blending, desserts, sauces, and other dishes where you want a light creamy component.
  • Silken tofu is made differently from regular tofu. It coagulates from soy milk without curdling/pressing, which gives it its characteristic soft, silky texture.
  • It comes in soft, firm, and extra firm varieties. Soft silken tofu is like a jiggly pudding while firm/extra firm is more solid and dense.
  • Silken tofu is rich in plant-based protein, low in fat, gluten-free, and vegan when unprocessed. It's made from soybeans and water. For more information on tofu's suitability for a vegan diet, see this post: Is Tofu Vegan? Everything You Need To Know
  • It has very little flavor on its own so silken tofu easily absorbs the flavors of ingredients and seasonings it's prepared with.
  • Common uses for silken tofu include desserts like chocolate mousse, dips/dressings, smoothies, blended soups, Asian stir fries, veggie scrambles, and more! Its texture makes it more versatile than regular tofu.

🛒Where To Find Silken Tofu

A lot of varieties of silken tofu can be found in the refrigerator case - silken tofu is often stocked in the vegetarian meat alternatives section, Asian food aisle, or near other varieties of refrigerated tofu.

Also look in the Asian or ethnic food aisles for shelf-stable boxes of silken tofu which have a longer shelf life before opening. Larger supermarkets with bigger produce sections tend to carry multiple silken tofu options including extra firm, soft, and lite varieties.

Asian grocery stores almost always carry multiple varieties of both Japanese and Chinese brands of silken tofu. Health food stores like Whole Foods, Sprouts and Earth Fare also retail quality silken tofu options.

❄️Storage Instructions

Refrigerator Storage

Ensuring silken tofu is stored correctly is key to preserving its delicate texture. For refrigerator storage, keep unopened packages in their original packaging until you are ready to use them, at which point leftover portions should be transferred to an airtight container filled with fresh water.

Be sure to change the water daily, using within 7 days for best quality. As an alternative, you can thoroughly drain the tofu, tightly wrap in plastic wrap or parchment paper, and refrigerate for 3 to 4 days, changing the wrap if excessive moisture accumulates.

Freezer Storage

I don't recommend freezing silken tofu, as ice crystals compromise the delicate texture, making it spongy and coarse once thawed. For best results, purchase only what you plan to use within a week and follow proper protocols for chilling in water or airtight wrapping in the fridge. This keeps unused silken tofu smooth and creamy, ready to be incorporated into recipes.

🙋Frequently Asked Questions

How long does silken tofu last in the fridge?

Silken tofu typically lasts for about 7 days when stored in the refrigerator. To maintain its freshness, it's essential to keep it sealed in its original packaging or transfer it to an airtight container with some water covering it.

Can I use firm tofu instead of silken tofu?

While you can substitute firm tofu for silken tofu in some recipes, it's important to note that the texture and consistency will be different. Silken tofu has a softer, creamier texture, making it ideal for dishes like desserts, creamy sauces, and smoothies, whereas firm tofu holds its shape better and is suitable for stir-fries, grilling, and baking.

Is silken tofu healthier than regular tofu?

Both silken tofu and regular tofu offer various health benefits and can be part of a balanced diet. However, they have slightly different nutritional profiles.
Silken tofu, due to its softer texture, contains slightly more water and less protein than regular tofu. It's also lower in calories and fat. On the other hand, regular tofu, including varieties like firm or extra-firm tofu, tends to be higher in protein and fat, making it more satiating and suitable for dishes where a firmer texture is desired.
In terms of healthiness, both types of tofu are nutritious sources of plant-based protein, calcium, iron, and other essential nutrients. The choice between them depends on personal preferences, dietary needs, and the specific recipe being prepared.
